I've owned a bunch of different bikes over the years, as I used to race mountain (sport class) and road (Cat 3). That was back in the late 80's and early 90's though when I had time to train. Since I don't have much time to ride these days, I've pared down to only 2 bikes:

Moots YBBeat 19.5" frame, Speedgoat Mod3 air fork, RaceFace/XTR/XT drive train, King headset and hubs, Moots stem, bar, seatpost. Great bike...I'll never sell it.
